Ingredients
How to make mangosteen salad
Wash the bacon and shrimp, peel the shrimp and remove the heads. Boil these two ingredients in a pot.
For this dish, use raw mangosteen. Soak the mangosteen in water and peel it. Some water will clean the fruit while the plastic will prevent the mangosteen’s core from becoming dark. Slice the mangosteen thinly.
Peel and wash the carrots, then cut them into small pieces. Place the carrots in a bowl, add 1 teaspoon of sugar and 2 slices of lemon. Stir well and let it sit for about 10 minutes to infuse the flavors. This will soften the carrots and reduce their strong flavor while maintaining their crunchiness in the salad.
Peel and finely chop the onions and garlic.
Remove damaged parts from the lettuce, wash it, and pat it dry.
In a large bowl, combine about 4 tablespoons of fish sauce, 3 tablespoons of sugar, and a little minced garlic. Mix by hand until the sugar is completely dissolved.
In the large bowl, add the marinated carrots, onions, mangosteen, laksa leaves, and a few slices of chili. Mix well. Gradually add spoonfuls of fish sauce and mix thoroughly by hand until all the ingredients are coated with the seasoning.
Note: Use chopsticks to mix the salad to prevent crushing the ingredients while maintaining their crispiness.
Add the cooked shrimp and bacon to the bowl and mix again with chopsticks to fully infuse the flavors. As a final touch, pour the remaining cooking oil from the onion into the salad to add shine.
Final dish
Plate the salad and garnish with peanuts and fried onions. Enjoy with a cup of sweet and sour fish sauce and shrimp crackers.
Although this dish may seem simple, it offers a sophisticated combination of flavors from the variety of ingredients used. Don’t hesitate to showcase your kitchen skills and treat your family to this delightful dish. Good luck!
