Although salted egg sponge cake is no longer as popular as it used to be, it still holds a special place in the hearts of young people. When I first heard about this cake, it seemed strange to combine a sweet dish like sponge cake with salted eggs and even cotton balls and sausages in some places. However, when I tried it, I was pleasantly surprised by its unique taste. Today, I will share with you how to make salted egg sponge cake at home without using an oven or an egg beater.

Step 1 Beat eggs
Separate 4 egg yolks in a large bowl. Use a whisk to gently stir and add 40g sugar. Beat the mixture until the sugar dissolves. Then add 40ml unsweetened fresh milk and 35ml cooking oil, and continue stirring.
Step 2 Mix flour with yolk
Use a rail with small holes to sift 50g flour and 50g cornstarch into a bowl and mix well.
Step 3 Beat eggs and mix
Separate the yolks of the remaining chicken eggs in another bowl and add 40g sugar and a few drops of lemon juice. Use a hand whisk to beat gently for 15-20 minutes until the eggs become creamy. Mix the beaten egg whites into the bowl of flour, and then add 1 teaspoon of vanilla flavor. Stir gently to create aroma.
Note: The whisk must be very clean and the whites must not mix with the yolk, or else the cake will not rise properly.
Step 4 Steamed buns
Pour the flour mixture into each cake mold, filling it about 1cm from the top of the mold as the cake will rise during cooking. Place the cake molds in a rice cooker, cover, and cook for about 20 minutes.
Step 5 Separate egg yolks
Separate the yolks of the salted eggs and steam them until cooked. If desired, wash the yolks with alcohol to remove any fishy smell.

Step 6 Make whipped cream
While waiting for the cakes to cook, you can make whipped cream to spread on them. In a bowl, mix 1 egg yolk, 20g sugar, 200ml fresh milk with sugar, and 20g cornstarch. Cook the mixture in a pot until it thickens like ice cream. Then, remove from heat.
Step 7 Finished Product
Once the cakes are done, use a spoon to spread the cooked whipped cream on them. Place 1/2 of a salted egg yolk (or the whole yolk, depending on your preference) in the center and sprinkle some more cream on top.
